  • 🌿 Why Our Ghee Starts With A2 Milk ?

Not all milk is the same.

Traditional Indian cows (like Gir, Sahiwal, Kankrej) naturally produce A2 milk, which contains only the A2 beta-casein protein.

    Why A2 matters:

    • ✔ Easier to digest for many people
    • ✔ Does not release BCM-7, a peptide linked to digestive discomfort
    • ✔ Closer to the milk consumed in ancient India
    • ✔ Preferred in Ayurveda for daily nourishment

Most commercial dairy today uses crossbred or European cows, whose milk contains A1 or mixed A1/A2 proteins. Our ghee is made only from A2 milk, preserving its natural goodness.

  • just curd in traditional earthen pot that is ethnic and elegant look

    🥛 Why Curd-Based Ghee (Not Cream-Based) ?

Traditional ghee was never made from cream.

    Our Process:

    A2 Milk → Set into Curd → Hand-churned → Butter → Slow-heated into Ghee

    Why curd-based ghee is superior:

    • Natural fermentation improves digestibility
    • ✔ Enhances beneficial fatty acids
    • ✔ Reduces lactose & milk solids naturally
    • ✔ Produces a deeper aroma and richer taste

    Cream-based ghee (industrial method):

    • Made by separating cream directly from milk
    • Skips fermentation entirely
    • Focused on speed and yield, not nutrition

👉 Curd-based ghee is how ghee has been made for thousands of years.

  • 🪔 Why the Bilona Method (Not Machine Processing) ?

Bilona is the traditional hand-churning method described in ancient Indian texts.

    What makes Bilona special:

    • ✔ Butter is churned slowly at controlled temperatures
    • ✔ Preserves fat-soluble vitamins A, D, E & K
    • ✔ Maintains ghee’s natural grainy texture
    • ✔ Produces a nutty aroma and golden color

    Machine-made ghee:

    • Uses high-speed centrifuges
    • Often overheated
    • Optimized for mass production
    • Loses subtle nutrients and aroma

Bilona ghee takes more milk, more time, and more care — which is why it was traditionally reserved for families, rituals, and healing.

All about A2 Bilona Ghee

What is A2 Bilona Gir Cow Ghee?

Organic Mantra A2 Bilona Ghee is traditionally prepared using the ancient Bilona method described in Ayurveda.

Milk from indigenous Gir cows is first turned into curd, then hand-churned to obtain butter, which is slowly heated to produce nutrient-rich ghee.

Unlike industrial ghee made from cream or milk fat, this method preserves natural aroma, texture, and nutrients.

What is the Bilona method?

Bilona is a traditional Ayurvedic process where:

  1. Fresh milk is converted into curd (dahi)
  2. Curd is hand churned using a wooden churner
  3. Butter obtained from curd is slowly heated to produce ghee

This slow and natural process enhances flavour, digestibility, and nutritional value.

How is Organic Mantra A2 ghee different from regular ghee?

Most commercial ghee is made by separating cream directly from milk and heating it.

Organic Mantra ghee is made using the curd-to-butter method, which:

• Requires significantly more milk

• Is slower and labour intensive

• Preserves traditional taste and nutrition

This is why Bilona ghee is considered superior in Ayurveda.

Why does your ghee sometimes become grainy or solid?

Pure ghee naturally solidifies at cooler temperatures and may develop a grainy texture.

This is a sign of traditionally prepared ghee and indicates it has not been processed or altered.

Does ghee need refrigeration?

No.

Ghee has a naturally long shelf life and can be stored at room temperature in a cool, dry place away from sunlight.

Always use a clean, dry spoon to maintain freshness.

Why does the colour vary between batches?

Natural ghee colour can vary from golden yellow to pale yellow depending on:

• Season

• Cow diet

• Grass quality

This variation is completely natural and a sign of authentic farm-produced ghee

Is your ghee lab tested?

Yes.

Organic Mantra ghee is independently lab tested for:

• Purity

• Heavy metals

• Quality standards

We maintain strict quality checks before it is released.

Is your ghee suitable for cooking?

Yes. Ghee has a high smoke point (~250°C) making it ideal for:

• Cooking

• Frying

• Tempering (tadka)

• Ayurvedic consumption

Is your ghee lactose free?

Ghee contains extremely low levels of lactose and casein.

Many people with lactose sensitivity tolerate ghee well, but individuals with severe allergies should consult a healthcare professional.

Why is Bilona ghee expensive?

Traditional Bilona ghee requires significantly more milk and manual effort.

Approximately 25–30 litres of milk are required to produce 1 litre of ghee, which makes it a premium product.
